For me, I've been a big fan of Cyanogenmod 7. It's been my daily driver for almost a year. Very fast, very stable, great battery life.
Make a nandroid of your current setup and give it a shot. You can always restore back.
You might also like some of the other GB ROM's out there too. I know Nills' is a favorite and I enjoyed it very much when I tried it.
