I re-flashed my X back to 2.3.320 and was hoping I would get notification, on the device, that an update is ready - I heard that GB is rolling out too. Shouldn't I at least be getting a notification that .340 is available to install?

According to Verizon, the update's not yet pushing out. New Android 2.3.3 Gingerbread build for Droid X reportedly is pushing over the air [Update: Verizon says no update yet] | Android Central

If you flashed to 2.3.320 you won't get an update notification because the phone is reporting that it's already on 2.3.
