I love the buzzbox news widget.
Rockplayer for .avi movies too.

Logmein. Makes my tab a pc when I need it. Didn't bother when I only had a smartphone.

I use LogMeIn as well. I dumped my laptop for my tab.

Dolphin HD for web
Pandora
Goggles
Grocery IQ

Also use Swiftkey and Thumb Keyboard. I like Thumb Keyboard for when I have to type a lot. It is spaced out better for my hands, especially in landscape mode.

Kindle is awesome on this. I also bought docs togo. It is the most I have spent on an app yet but it is well worth it.
