pre installed apps

Settings>Applications>Manage Applications>>Running.....And scroll through and Force Stop on the ones you don't want running.
 
Willy is right, but keep in mind that some apps will continue to restart themselves after you've killed them, causing more work for the system and the battery. Just because something is running doesn't mean it's taxing your battery - unless it shows up under "Battery use" it's probably safe to leave it alone.
