Last month I created a label on my Pixel 7 and named it "Other".
Today I typed "Gmail" into the URL on my desktop and in the left-hand column I found "Other".
I deleted "Other".
Then I looked at my Pixel 7 and saw that it was still there.

Why does "Other" show up on my cell phone but not in my desktop's Gmail?

More importantly, how can I delete it from my cell phone?

It should have in both places
On the phone clear the Gmail apps cache then force stop it and see if it's gone

Another step in the Gmail app

Open Gmail app
Tap ☰ (menu) → scroll down → Settings
Tap your email account
Tap Manage labels
Tap others
Set Label sync to None

If still being stubborn sign out your Gmail on the phone and sign in or clearing data then force stop it.

Can you clarify -- are you talking about Labels in Gmail (i.e., what Gmail calls its folders)?

When you say you typed "Gmail" into the URL or your desktop, do you mean the URL bar of the desktop browser you're using on your computer?

Be aware that as of now, you can't actually manage labels in the Gmail app for Android -- you can only do that in the web interface on a desktop browser. I think Google is working on finally bringing this feature to the Android app, but it's not available yet. https://www.androidauthority.com/gmail-android-labels-apk-teardown-3632799/

Yes, I'm talking about Labels in Gmail.
Yes, I mean the URL bar of the desktop browser you're using on my computer.

I am working with the desktop browser (Firefox).

I'm thinking that sometimes it takes quite a while for those changes to appear on the Pixel 7. Deleting labels is one of those things. I posted the problem yesterday around 4:20 PM and I checked to see if the cellphone reflected those changes around 8 PM. The label that I deleted using the desktop still appeared on the cell phone.

Today after reading your replies I checked the phone again and this time the deleted label was no longer present. Very odd  .

So now the change that I applied yesterday has taken effect today, and I'm happy-happy.

Interesting -- when I've created or deleted labels on the Gmail website, the changes are typically reflected immediately on the phone. Your delay might have been due to that label not being set to sync on your phone. On the Gmail app on the phone, if you Menu>Settings>[your Gmail account]>Manage Labels, you can see which of your own labels are set to sync on your phone. They don't default to syncing -- you typically have to set that manually.

I also don't use Firefox on my computers, so I don't know exactly how that sidebar works.

Probably took longer to sync on the device
