Process com.android.launcher has stopped unexpectedly

Hard Reset. reinstall apps and sync if all else fails.
My guess is another app is casing it.
What have you installed since it started? try un-installing those first.

Chiefvelo is correct. You are probably having an issue with an app that is using too much resources or conflicting with the stock launcher functions.
Another thing that you can do (it is going to be a pain but could work) is go into Settings> Applications >Manage>Installed and then go into each app and clear cache and data. There isn't a guaranty that this will work but it couldn't hurt, a little easier than doing a factory reset.
Are you rooted? Custom Rom? If so then that could be an issue as well.

Not rooted. Funny thing is, it hasn't done this since I posted this thread. I think it started after I attempted to install swype. I have since deleted both files from my SD card and uninstalled the the app and installer. Don't know if that's what's causing it but it hasn't done it, as previously stated, since Friday.
