Question about phone number.

I had a Samsung Galaxy S5 before I bought a Pixel 3. I still have it. My Wife has an old flip phone that she uses only for email. She's a Techniphobic and refuses the Samsung but she uses my Pixel for text messages and Assistant. If I could just change Google and Textra phone number to hers, I'm sure she will use it. Some people have told me that I need to change the SIM card to move her phone number to the Samsung from her LG 6100. Any suggestions? Thanks.

Your number is associated with the SIM card, NOT the texting app or Google account signed into the phone. So you can't "set up Textra" with her number unless you plop her SIM card into the Samsung phone, period. Textra will use whatever number the SIM card is inserted in the phone at the time.

For Assisstant, yes, just using her Google account on any device would suffice.
