It's a bit convoluted.
Basically, open the app drawer. Click the menu overflow button in the upper right. Go to view apps by. Click "custom" . Now, in the app drawer, when you long-press on an icon, you'll be able to drag it onto another so that it creates a folder like normal.

Nope...not working. When I long-press on an icon, the screen goes to the home screen where it wants me to put it. Any other suggestions?
This is really one area LG's UI team did a pretty crummy job of, haha.

For those wondering, resetting it to "View Apps by Name" keeps the folder you've created and organizes them alphabetical by folders, then apps. Cleans up a lot.
