Hi I want to record our holiday with our newborn, but when I record and put the video on my sd card to watch on my laptop the video is still only the same size as the phone? Is it possible to convert the video so it fills my lap top screen more or can't this be done and will only ever be as big as my phone?

Welcome to Android Central! What program on the laptop are you using to view the video? Are you taking the videos in portrait or landscape orientation? If they're in portrait mode, there's no way to fill the screen on a laptop since the laptop's screen is in landscape. If your laptop is a 2-in-1 convertible and can act like a tablet, then maybe if you rotate it to portrait orientation, it'll fill the screen.

I record in portrait maybe I should try landscape?

I always think recording in landscape makes more sense if you ever plan to view the videos on any conventional monitor or TV screen, since those are all in landscape orientation as well. If you primarily view them on your phone, then portrait is ok.
