S3 Verizon - Is there a setting to automatically shutoff sounds from 11:00 PM - 7:00 AM?

Your best bet to do this automatically is with the app Tasker. It's about $6 and can be a little complex for a new user. Another way to do this is with NFC tags. Install the app NFC Task Launcher and there will be a link to buy some. They may even have a promotion that let's you get some for free by tweeting a promotional message. There are numerous videos on YouTube that can show you how to use NFC to automate tasks and settings.
 
I recommend Tasker also.

I have several profiles that change or silence notifications and they work flawlessly.
 
Thanks for the info. I'm a little disappointed this isn't built in the operating system. Even my old BlackBerry could do this...

It is built in to the device.
Go to options and then "blocking mode" and then set it for the times to be silent.

Hmm... I don't see options nor blocking mode on my S3. Please tell me where to go in "Settings".

First screenshot is the settings page on my S3 (AT&T); Second is the blocking mode with time enabled and you can also add priority contacts to be allowed during this time.

Thanks for the screen shots. I am on Verizon, and the screen shot I have attached, as you will see, hasn't a provision to shut down the device, or put in sleep mode. I have found an app called Sound Manager from the Play Store that looks like it will work. Thanks to all for your help!

Tasker is great but way to complex to learn if you only want to shut off sounds at night.

I use a free app called Profile Scheduler. I think the "Silent" profile was pretty much setup how I needed it and all I needed to do is set the times. You can create profiles for movie theaters, cars, planes, meetings etc... if you wanted.

I have the Silent profile turn off wifi, data, sounds etc.. from 11:30pm -7:29am. So at 7:30am everything is turned back on so my alarm can start up to the sound of my Pandora morning music station.

One thing I wish it did was turn off the LEDs during that time so I did not need to put my phone face down at night.

Not trying to bash the OP here, because I don't even know if there was the tone he/she was trying to convey, but I cringe a little anytime folks say things like "*even* my [insert other device here] could do that!!!"

There's always a bit of learning curve with switching device to learn how to set them up the way we want...and different OS builders tend to focus on different areas when it comes to settings and controls. BlackBerry, for example, puts a lot of focus on alert profiles, and always has -- that's a great feature of the platform. There are also quite a few things Androids can do that BlackBerries cannot. (If you have an Apple, however, there are very little configuration options, you'll just use it the way they intended you to use it, thank you very much!). (Sorry, I couldn't resist). To be honest, notification profiles was something I missed the most when I switched a few years ago as well...but it didn't take long for me to realize that was just 1 of very few missed features compared to many new great ones Android had to offer.

If every OS manufacturer built out user controls for every single thing, the settings menus would take days to navigate and be far too complex for the average user. The great thing about Android, in my opinion, is that *if* there is a way to get something done that's not found in the general settings menus, there's probably an app for it...or at least a way to get Tasker to do it.

Well, I'll be nice. But, EVEN AT&T has this feature, and for the working road warrior rep who has customers who don't care what time it is, the blocking mode is a great feature that I expect on a premium product with a major premium carrier. As you have read, I have found an app as a work around. Have a great day!
