How do I fix my S6 it randomly changed times to one hour behind this morning and when I change it to current time it goes back to one hour behind!! uggh help!!

Call your carrier. The time is set to the time at the tower. (Unless you lice right at the western edge of a time zone, and the tower you're picking up is on the other side of the line.) If their tower is set to the wrong time, they'd want to know about it so they can fix it. (That happens from time to time - they make a "fix" and set the tower's timezone to the wrong one.)
