It's very possible that your vehicle needs a firmware upgrade to allow the S8 to pair.
You may want to post your vehicle make and model and year. So that if anyone else has the same,
they could maybe shed some light.
But typically that is the problem.

I have a 2010 Acura TL and my s8+ also does not pair with my car but it does pair with my gfs 2017 honda accord and bluetooth speakers

The 2010 says it all, there is probably technology being used that your car just simply doesn't understand.
I am not even sure if there would be a firmware update for your car based on it's age. I would be reaching out to your local Honda Dealership

I was having the same problem with my new S8 and 2011 Jeep Patriot. I tried everything I could think of , with multiple devices as well. Out of frustration I finally contacted Samsung directly. This is what they told me to do. It worked on the jeep and also on a smaller stand alone speaker. Still trying to get my ear phones connected though.

"You can boot up your device in Safe mode for up to 12 hours to troubleshoot whether added applications are causing problems, such as reboots, slowdowns, crashes, battery drain, or overheating. Safe mode will load only basic system software, and will disable third-party applications.

Please follow the below steps to boot your device in Safe Mode and see if there are any issues.

1. Make sure your device is turned off.
2. Turn on device to boot up your device.
3. After the start-up animation starts to display, continually tap VOLUME DOWN KEY
4. When the Home screen is displayed, Safe mode is displayed in the lower left corner of the screen. "

After that try pairing as per normal. Hope this helps
