I use stock. Like it. Have heard Nova is good.

I use Nova Launcher. Works great and I like the gestures functionality.

Other launchers are good too though, it's mostly personal preference. I used Go for 2 years on my Thunderbolt without issue.

There is no best.. All the popular launchers have thousands of users who each think that one is the best. Read the reviews and pick one you might like.

I'm currently using GO Launcher and have customized almost the entire UI appearance and functionality of my Note II.
I followed Coldfusion's guide and still continue to tweak each day.
