I have a Galaxy s6 and am planning on getting a samsung gear s to pair with it. Do I need to buy a share contract through EE or just use my sim in my phone when not taking my phone with me

I don't know if you will have IMEA/device registration issues by just swapping your sim that some reported when they swapped sims in to their new S6, probably not.
However another option is to get a simple pay as you go sim for your Gear S and set your S6 via Gear manager to auto forward calls and messages assuming your not going to use the gear for much data when not paired to your S6
I've got my watch and a pay as you go sim but when I make outgoing call it uses the pay as you go number can that be altered in the setting somewhere so can forward it through my s6 number
