We have a S7 Edge and photos are being deleted automatically in the conversations - only the photo, not the conversation is being removed. I toggled a setting that was on by default that set a 1k limit before deleting old conversations, but that's not the issue. These messages with photos are only a few days old too. This behavior was not an issue on the Galaxy S5.
