Windows Phone -> Moto X -> Samsung S8+

Hello,

This is my second android phone in a year. I love the phone, but what is the Bloat that everyone refers to in the comments? I have a TMO-S8+.

Also, I have logged in with my gmail account, but it carried no pictures over. Do I need to install "Google's mail/contacts/calendar"?

Did you have photos backed up to Google Photos / Google Drive? That's the only way they'd carry over. Also, if you did, you're going to want to check the GPhotos/GDrive app because the stock Samsung gallery won't show them. The stock gallery in your moto X would have been GPhotos.
