How do I take single shot pics with out the countdown randomly popping up?
Would live a crash course on the camera features. Any thoughts ?

You should be able to take single pictures as long as the timer function isn't active. However, check your camera options in the 'Shooting Methods' section; make sure that either voice commands or show palm aren't active if that's what's causing the timer being triggered (these two options do not have an option to disable the timer, they will always do a countdown before snapping the picture).
