Is there anyway to cut the number of "pages" to just the home screen and maybe two more?

Not in sense. Root and load cyanogen, oops. No real root for Vivid.

Didn't know that. I tend to be sort of plain Jane Sense user. Maybe a year from now I'll get bored and then want to use other launchers.
