Set bringhtness and have it never change

Samsung S7 Active. If I am fumbling around with the phone, for example trying to grab it and answer the phone while my other hand and mind are engaged, I sometimes accidentally set the brightness so dim that I cannot see anything on the screen.

I am not one to fiddle with the brightness. I want to be able to set it so that it never changes unless I go back and re-set it by a complex enough maneuver that means i won't do it accidentally.

It is hart to search for this topic because if I include the sord "lock" I only get all of the answers for people who want the brightness on their lock screen to be differnet. Is there something I can do?

Auto brightness is set to "Off." This setting seems to determine whether an app can change the brightness. The event I am describing involves me fumbling with my phone.
 
I know that is how it is supposed to work. I know I am not fumbling enough to go to settings and push that slider to on, but I may be pressing some of the buttons on the sides of the phone. I'll ask at the phone store the next time I get a chance, and if they have a solution I will post it. Thank you so much for your help.
