As good as the jpegs are that come straight out of the phone I'm finding that shooting in raw and post processing in Lightroom, I'm able to recover a lot more detail from the sensor.

First photo below is straight from phone. Second is the one I processed in Lightroom.

That’s going to be virtually always true with any camera. Raw has a ton more data to work with. Simply compare the file size of a .jpg and the .dng.

I almost always use raw, jpgs are only 8bit in depth.

Yes however someone like Google has nailed the computational post processing so well (even Samsung to some extent) that post processing by the amateur hobbyist isn't always guaranteed to produce better results than the jpg the phone puts out (which in case on note 8 and pixel is already very good)

And where is this? I'll be driving down I-75 south to Knoxville, and the smokies and on down through Ashville this weekend and I hope the trees have started changing. I want to try this camera out and I just got (for my birthday) a Canon Rebel T6 and I am hoping to get some good shots with it too! But I have no idea how to use it so I may have to start taking some photography classes....

you will love that Rebel. that's the first digital cam I started with. still love it and have it and the lenses, but mine died and have toyed with the idea of replacing it. my D300 is just too heavy sometimes.
