Should I use the new Sim card that came in my t-mobile box? Does it matter if I use the old one?

Nope... It's just a card with an identifier code. Not much to it.

Came over from At&t to Verizon.
The sims card was already in the phone.
They scanned the box and transferred my phone number over .
And never even took the sims card out of the phone.

You can certainly keep your new SIM card for future use! After a few years, SIM cards tend to get a little rusty. Enjoy your new phone!!
