Some Questions

I just rooted my Fascinate yesterday and flashed JT's superclean rom, and I'm loving it, so much better. I do have a couple of questions. First question, I was thinking of flashing one of geekniks kernals, should I wipe data and cache when flashin a kernal, or is it safe to just flash the kernal?

Second, when DJ05 comes out and eventually froyo and the updated roms come out, do I need to wipe data and cache when updating?

No need to wipe anything when flashing a kernel.

When you change Roms, it is a good idea to wipe data and cache. When upgrading from stock to a Rom it usually is not needed either.
