I have a Sprint LG Optimus S that I carried for a while but is no longer active as a phone now that I have upgraded. I have given it to my son and now I am wondering if there are any custom ROMs that are geared toward using it as just an Android device and getting rid of most/all of the phone stuff. Even if there aren't any created specifically for this I would like to know if anyone has a recommendation on the best ROM to use for this situation. Thanks!

I don't think that has been done specifically yet. It may happen as this device gets retired more. Also, my understanding is that removing Phone.apk from /system/app is a bad idea. You can, of course, remove add or remove select other apk's to lighten the load or add desired functionality, respectively. There are guides around as to what does what; LeslieAnn has a good one in the Optimus V section.

thekraven's CM7 is my recommendation. Super-lightweight, you can easily turn off the data connection to save your battery, controls for music player are integrated on the lockscreen if he is going to use it for that, it easily allows contacts to be stored locally, etc.

If you are considering other ROMs for this, I would definitely steer you toward the AOSP options, instead of stock-based.
