Stay on 4.4.4

Bought a refurbished 2012 32gb tablet from eBay for £50, only wanted something to tether to my note 4 at lunchtimes in work for some websurfing so didn't want to spend £100's.

Anyway read some horror stories about lollipop on this tablet? I've updated the tablet to 4.4.4 is safe to say to keep it functional don't install 5.0 etc? seems to work fine on 4.4.4

Read some stories saying 5.1.1 makes it decent again but I'm sure I should risk it?

I like 5.1.1 on my N7 2012 & N9 but some just dont. Ive not tried the N7 2013 version with 5.1.1 myself, but am fairly sure its a solid OS now.
You can simply root the tablet - that will lock you into 4.4.4 with no possibility of an OTA update taking unless you unroot the tablet or flash it yourself to a higher version.
you could always use the Nexus root toolkit to backup your tablet then update to 5.1.1 and if you don't like it just revert back to 4.4.4
 
IIABDFI (If It Ain't Broke...)

Lollipop (v.5 - 5.11) have been an, ahem...disappointment on my N7. In the greater scheme of things, I regret moving from 4.4.4. And moving back is something of a geekfest I'm not prepared to do.

If the device is working for you and the apps you need are working, leave well enough alone.
