stock 4.3 email client "from" display name

I hope i'm missing something. I set up an exchange activesync account on my gs3 4.3. let's say my name is "R.U. Kidding" and my email address is "whatgeniussetthisup@domain.com". when I send an email from the stock email client on my phone, it shows up on the recipient's side as from whatgeniussetthisup. (not whatgeniussetthisup@domain.com) I can't find in the client where to set a display name for mail I send. I see a spot to change the name for the *account*, but that doesn't change the 'from' address the recipient sees.
