Is there any way of running stock Android OS on the Note 5 without rooting it or using any other underhand method?
Or some way to run stock Android OS parallel to touchwiz without affecting any data and device performance?

Grab a moto pure X or nexus. Nothing on the note 5

Nope. You'd have to root and flash a rom. As someone else said, grab a nexus or motorola X.
