Is there any way to change the background color in the stock messaging app like you could on the older Notes?

I am going to the settings option and not seeing anything.

IIRC only with Themes now.

I also like to change the backgrounds so when you find one that you like in Samsung themes, you can also change the keyboard style in message settings to go light/dark etc.

Yes they can.

I have tried clicking on the icon on the homepage but I don't see the option to change it. Again I am newish to Samsung.

It's all done through Samsung themes, you can change icons, wallpaper and the whole theme.

Here's what I've found out.
The standard Message App on the Note 9 is from Samsung.
I use Verizon - so I downloaded the Verizon Message App.
Bam! I can now change the colors, bubbles and such.
So much happier!
I also dissabled the Samsung Message App. You cannot delete it.
