So I've been searching around a bit, but I can't find anything on it. How do I text on my N7, when my phone is the iPhone 4S?

Are you trying to use your Nexus 7 to text from the same number as the line you have your iPhone 4S on?
 
Yes you can. There is a paid app called Tablet Talk that works. I have it connected by bluetooth to my HTC Thunderboldt and all my texts come in about the same time as on my phone. It is also supposed to work with WIFI but I am having a problem syncing them.
 
I've tried tablet talk and it won't work with Apple devices. I guess I'm sol unless I use Google voice or something else

There are a number of features for which Apple has made the conscious choice not to expose in an API, meaning it's simply not possible without some serious hackery (if it's even possible at all!). Access to the SMS libraries is one of them. Access to the signal strength data for mobile or WiFi is another. I use a WiFi mapping application to do signal "heat maps" and also use Sensorly to report my carrier's real-time signal strengths to support crowdsourced signal maps - and neither function is available on a non-jailbroken iPhone/iPad - at least two friends have purchased cheap Android tablets just to have a WiFi signal strength meter like Wifi Analyzer available in their toolkit.

So, unfortunately, there is really no way to share iPhone SMS with anything that Apple does not provide their own applications for. I don't know if Apple has some way of syncing SMS to MobileMe or whatever it's called, but if so you might be able to get to them from a web browser or something?
 
This is a workaround but you can sign up for google voice and add your iPhone as the main phone for sending texts and it'll show up both in the app on your nexus 7 and on your phone. Not sure if you can make people see your iPhone # or if it'll show the google voice number, you'll have to check the settings: http://google.com/voice
 
Google Voice works. I just sent myself a text from the N7 to my phone using the google voice app. It shows up on my phone as from my google voice number. There may be a setting somewhere to change the "from" number to your regular phone number, but I didn't see it in a quick look around on the N7. Maybe on the Voice website?
 
Using Sprint for cell service, my Sprint number is integrated with Google Voice, so when I use it to text, or call using GrooveIP, it's my Sprint number that shows up.
