If I remember correctly from what I've read, he was initially unhappy that his surname was lost and his children would still be Windsor.

Yes but then it was changed a couple of decades ago to add it to the formal surname. So Prince Harry's son and daughter were/are Archie and Lilibet Mountbatten -Windsor. They may be Prince Archie and Princess Lilibet now Charles is King.

How is it that some keep their given name but others don't? I watched 'The King's Speech' but didn't understand how David became Edward, and Albert became George.

The new King or Queen can choose any of their many given names as a regnal name. So Charles could choose any name as King from Charles Philip Arthur George. He could have become King Arthur if he had wanted to be. But he chose to become Charles III instead.

I attended 5 or 6 Doobie Brothers Concerts at some great venues. I always enjoyed the dual drummers.
I'm glad they were inducted into the Rock N Roll Hall of Fame before he passed.
