Thinking About Rooting....

The only thing that's stopping me is the whole "IT WILL WIPE YOUR DATA" thing. Is there a way to root that won't wipe your data?

I might still do it anyways, due to my data being restorable. But I'd prefer it if that wasn't nessecary.

If the only way to do is to backup and restore my data, how would I go about doing that?

Just becuase you gain Super User (SU) access and gain Root to your phone, you will not lose anything, you will in fact GAIN the right to use your phone the way you want to... NOW, once you do root, you need to go into HBOOT and make a Nandroid backup of your current settings, then your off and running in the wide world of ROMing ;) installing ROMs will erase data not rooting

ALSO, make sure you first sync your google acct before doing anything... itll save your numbers and apps and stuff ;) have fun

There is no current root method that does not erase data.

I dont think you can back up app data before you root. After you root there are several options to back up app data such as titanium backup or mybackup for root users.

Also once you've rooted you have rom manager/recovery for nandroid backups.

You can backup your apps, contacts, etc with google (set Sync Docs in accounts and sync - google like sseth said.
