Just download a new launcher I recommend Apex or Nova....you can also download new lock screens

Touchwiz itself it more than just the launcher dock & app list layout. Touchwiz is Samsung's own UI experience. It goes way deeper like the toggles in the notification pulldown and basically sets the theme for your entire device.

If your looking to just change up your launcher-dock and some other things then do as suggested above and try out the various different launchers available from the Play Store.

To completely answer your Touchwiz and rooting question, you would have to root and install an AOSP based ROM like Cyanogen Mod ROM that completely removes the Touchwiz experience.

The FC may be something to deal with separately, as I don't think that's a common problem. Are you usually doing something specific when that happens?

If you want a more "pure Google" look without rooting and installing a different ROM, Nova Launcher is worth checking out. There is no way to *remove* touchwiz, as mentioned, it's an integrated part of the S3 OS, and more than just a launcher. You'd lose quite a bit of operability if you even tried to remove it.

Compared to how many OEM UI's used to really overpower the Android experience, I actually find Samsung's TW on ICS (i.e. on the S3) to be quite acceptable. Some nice added functionality without completely overhauling the look and feel of it....but that's just my opinion.
 
Exactly as stated above. Removing TW is not a doable option with your current OS setup even if rooted. It is built in and around the framework-res.apk, SystemUI.apk and also things like Contacts, Dialer, Calendar, etc.. have all been customized to accept the TW UI... Only was is using a different launcher if remaining stock or run rooted and flash a AOSP based ROM.

Root and ROM CM10 M1 it is perfectly stable and you will be happy in the end
