Any thoughts?

Welcome to AC!

Android has changed a lot since the old days, but it's still very different than the iPhone. That's neither good nor bad, it just is. Every platform has its ways of working, and its strengths and weaknesses. If you constantly compare it to iOS, and wonder why it doesn't work like iOS does, you'll never be satisfied.

Start by reading the "New to Android Central" link in my signature.
Then look at this http://forums.androidcentral.com/general-help-how/137252-apple-users-guide-android.html
If your tablet is running JellyBean (Android 4.1 or above) check this out, too: http://forums.androidcentral.com/sprint-galaxy-s-iii/219829-jellybean-tips-tricks.html

Oh, and most important of all: Fee free to ask questions about anything you're not clear on. There are lots of friendly, helpful people here.

I agree with Meyer that if you constantly compare the Note to the iPhone, you will be dissatisfied. Almost like comparing an Audi R8 to a Corvette ZR-1. You can check out YouTube. Lots of information there, along with a guy named Armando Ferreira. He did a five part comparison between Apple and Android. Now the videos are old, like a little over a year, but at least still informative on the Android side. A lot of the things he talks about what android can do are still valid in the current OS.

However, if you want to further customize your device, you can simply download a new launcher from Play. A launcher is a User Interface and changes how you can set up your device. I would suggest Nova. I love it to the point where I hardly ever use TouchWiz (Samsung's stock launcher) With Nova, you can change grid layouts for the app drawer and home screens, scrolling animation, color themes, and more. And that is all in the free version, and you can download this without the need to root.

In all reality it is what is going to work best for your needs and what you need the phone for. I own an iPhone 4S and Yes i love it but then I have specific uses for it. Since I have become a member of Android Central and Welcome to you as well I have learned a great deal about what Android is NOW and it has come a long way. Use the link meyer provided you as I did and I plan on an HTC One in the very near future and am going to keep my iPhone for another use and the Android for personal use. All the best to you and we look forward to seeing you around the forums.
