uninstall apps with flipz fresh pre-kitchen

do i have to root my phone before uninstalling any pre-loaded apps? and if so, will my hero remember my settings during the rooting process?

I just did this on my phone last nite, I rooted it though, I don't know if you can do the uninstall without rooting, all my settings came right back up, after rooting, I had to reselect SENSE as my default home, but that is it, and the FRESH Clear Theme is pretty sweet
