Want to upgrade to Android 7 from 5 which is the last update from my carrier (AT&T) for the S6. I found instructions which described downloading update via FOTA but I can't seem to find those updates.

Settings >software update ?

What I'm asking is can you find those updates and load them manually since my carrier never did? I found these instructions but where can I find those firmware updates? Here is what I found:

Here is the current update: Android 7.0.1 Nougat

The details

Release date: April 5, 2018
Android version: 7.0.1
Security patch level (SPL): March 1, 2018
Baseband version: G920AUCS7ERC1
Build number: NRD90M.G920AUCS7ERC1
Previous version required: G920AUCU7ERB1
File size: 31.7MB

The updates

What's changing: Android device security updates

Getting started
You can download the update via Firmware Over the Air (FOTA).
You must connect your device to Wi-Fi to download the update.
Although there should be no impacts to settings or data, we recommend that you back up your media files to an SD card, a PC, or using a favorite application, prior to upgrading the software.
To receive this software update, your device must be on baseband version G920AUCU7ERB1. If not, repeat the update process until you’ve installed baseband version G920AUCU7ERB1, and then you should be able to install the latest software update.

Well you can use Odin flash it if the firmware available, you know how to do that?

Thanks, I'll look into that. Still don't know where the firmware is available.
There is a tool called samfirm or Frija download both and put your model number and carrier code see whats the latest update available and download or sammobile website. Then when ready ill give you tutorial on how to flash
