I had bought my S7E almost 2 years ago from Carphone Warehouse here in the UK - unlocked (should be working with any SIM card).

Right now, it is sitting in my drawer as I bought a new phone and I will be using the S7E as a backup.

However, I checked Software Updates and Oreo appeared as a download. Installing it now.

My question is - how did this happen if phones update OTA when only SIM cards are connected to their carriers? The phone doesn't have any SIM card in it now, but it still managed to detect the update and download it? Or does unlocked means that it should get updates, regardless of whether it's connected to a carrier or not?

Your phone is unlocked, so it doesn't rely upon a carrier to deliver the update. You received it directly from Samsung, and they don't care about whether you have service with a mobile carrier.
