When I take a screenshot by pressing the power and volume buttons simultaneously, the volume icon usually appears in the screenshot (which I don't want). If you do it just right it doesn't appear but usually it does and it's hard to do. I have to take half a dozen screenshots before I manage to get a good one. Am I doing something wrong or is it a bug?

Yeah it has to be using simultaneously or it will get the volume button, but there are other ways to take a screenshot , swipe your hand edge to edge , hey google screenshot, edge panel can take screenshot

There's an option to download in your Edge panel called Softkey Edge.

One more possible option.
Download Good lock from the Galaxy store then inside Good Lock download Navstar.
Navstar allows you to add an additional Navigation button. I added one for the screenshot since I use it all of the time.

I had forgotten about the "hey Google" way, thanks for the reminder...
