I have a LG k8+ 2018 with 7.1.2. Can I roll it back to 4.0 to root it any idea's will be greatly appreciated thank you

In short - no.

The expand upon that - The hardware platform came out long after KitKat, the OS will have no clue how to handle the capabilities of the hardware.

New thought what about rolling back the security updates to say 2017 or 16 would that be possible

If you can find the original ROM for the device, maybe.

Curious - is there a reason you need to do this?
