what are the best settings for incredible camera / camcorder

I'm just wondering since I'm not a camera buff and don't regularly record .
However , I recently had need to do some recording and camera shots indoors and outside in a variety of light and the thing I noticed is very grainy,poor light a reddish tint I monkeyed with some settings but they still were fairly crappy .so any help would be appreciated

when u take a picture first have the shot ready . just touch the screen it will focus then touch again and hold . that will take a much better picture
 
Also for most shots in low light I have to cancel the flash or the pic ends up completely washed out.
