It's supposed to be an Oreo cookie. And when you press on the picture for a few seconds, you'll be presented with an octopus that can be moved as you hold and drag your finger across the screen.

I've got an Essential phone sporting the 8.1 iteration of Oreo. The Easter egg much more closely resembles an Oreo cookie.
