What's consuming my memory....

Hello, I have installed 2 different ROMs (midNIGHT 2.8 (Dual), & Bonsaii) and see that my available memory has significantly decreased. After seeing this, I went back to my previous ROM that I loved (midNight 2.4(Dual)), and saw that, interestingly enough, my memory is still low. I went into Managing Apps and have minimal apps on the internal memory. I'm down to about 40 apps on the internal memory that should consume about 60-90mb. I saw when I installed the other ROMs, my memory was already up to 317/498 w/o any (very few apps) installed.

Could the memory hog be the "Dual" process in the ROMs?
Bonsaii is 170mb
midNight 2.8(Dual) is 154mb
midNight 2.4(Dual) is 132mb (what I really like & am using now)
TrulyEpic 2.06 is 134mb (this is not the most current ROM)

Is there anyway to see where my memory is going?

After deleting all of my apps that are over 3mb and moving most apps that could be moved to my SD card, I'm still using 392mb. I don't understand it.

Prior to each ROM installation, I:

Wipe/Factory Reset
Wipe Cache 3x
Advanced > Wipe Davlik 3x
then install zip file.
wait patiently while my apps load via the Market
then I get a message that Internal memory is low

NOTE: I'm on RFS, CWM2.5..., rooted
Does you think if I went to EXT4 adn CWM3.0, that would relieve some memory? (just brainstorming here...)
