So whenever I receive a WhatsApp message, the chat itself says "You" when it is actually the other person's message...if that makes sense. Anyone else have this issue?

Yep, it does do that. WhatsApp isn't properly supported on the Galaxy Watch. I knew that before I bought the watch. It's a Tizen limitation since Samsung hasn't partnered up with WhatsApp. You would only get a 'proper' experience on Android Wear as you would be able to install WA's official watch app.
For what it's worth, WA notifications are actually better than I expected on the Galaxy Watch, with a bit of thread support thrown in (though you lose the thread when you dismiss the notification). It's good enough for me though.
