Which apps to delete

I was aware from reviews that this tablet came with a lot of pre installed apps. I accessed the settings and apps menu and then went to all apps. I'm not sure what I can uninstall and what's needed.

For instance, I noticed there's a kids mode app installed. It doesn't appear that this can be uninstalled.

You cannot uninstall some apps, but you can use app manager to disable them and clear the data. This will effectively do the same thing.
