Why am I unable to update to 5.1.1 on my S6 Edge g925a?

unable to update to 5.1.1 on s6 edge g925a

I bought the phone from the US and using it in the UK. every time I try to update to 5.1.1 it says 'software update interupted'

Welcome to Android Central! I assume you got the phone from AT&T, right? Usually, in order to update the phone over the air, you have to be on the carrier that the phone was specifically designed for. You could try using Smart Switch to manually update.
