T-Mobile Galaxy S8 Why can't I set my app notifications to "Show Silently"?

I recently upgraded from a Samsung Galaxy S6 Active to a Samsung Galaxy S8 Active. I can't figure out why I lost the ability to change individual app notifications to "Show Silently"? I can't find anything anywhere that would tell me why this instant an option available to me. Can anyone tell me? I only have the options to block entirely, allow it to play a sound, or to allow it to override do not disturb. Where is my option to disable the sound and disable the message previews?
