Why is it when I record the audio is messed up

When I record snapchats and such, even with no music in the background. The sound is all distorted and funktified. My s7 worked perfectly, but now when I changed to the 8 the audio is all messed up.

Any video recording. The audio seems like there is no volume. Even the default camera app, when I record video the sound is messed up.

Welcome to Android Central! Make sure the secondary mic (at the top of the phone) isn't blocked, either by a poorly fitting case or clogged by lint. If it looks clear, then see if the problem persists in Safe Mode: https://support.t-mobile.com/docs/DOC-34283

Neither one of my mics are covered and it even happens no matter what pair of headphones i use. There needs to be a setting to help improve the audio recording function more clearly.

Welcome to Android Central! If the sound is "messed up" as mentioned by the OP, then there probably isn't a setting that can help -- it is more likely a problem with the mic.
