I have deleted and archived all my text messages and restarted my phone several times and it still shows on my home screen that I have 1 unread text.
Why is still showing one unread text messages and there are none?

No, you have one notification that you have a text message. The Android badges are for notifications, not for what they're notifications for. If you want true notification badging, you have to go to the paid ($5) version of Nova Launcher and (free) TeslaUnread for Nova Launcher. You also get a lot more. There's a free version (that doesn't do badging) to give you an idea of what it can do. (The free version does just about everything but badging - including being able to use themes and icon sets.)
