Why is the color so off on my camera? Plus blurring issues

I've been hating my s9+ camera. Hating! When some random combo of elements are perfect, it can take a beautiful picture. But I've only had that happen a few times in very very bright sunlight. Usually the colors are off. The darks are super dark and the lights are a few shades off and just look icky. Like bright orange looking peach or a bubblegum pink looking dull and then the rest of the photo has a weird tone I can't really describe. Also Ive noticed that it blurs hair - I can take a nice picture of my daughter but her hair looks like a blob of brown. Is the focus off? Anyone else have this issue?? I'm trying to learn the pro mode better but I'm usually taking quick on the fly pictures of my kids and don't want to mess with settings all the time.
