Sorry if this has been asked and answered, but what should function on this phone when using WiFi only. I know I can get on the browser, but what about SMS messaging? I thought that would work as well but it doesn't look like it does.

Nope, SMS will not work over WiFi as it is separate from data. That's why you can text and be on the phone at the same time.

SMS is sent in an area called the "control channel" that follows along side the call, so it MUST use the cellular network in order to function, however you can send an e-mail to PHONENUMBER@vtext.com such as 1234567890@vtext.com or to the carrier's default. Search Google for send text message from e-mail.

You can also use some other applications that allow you to buy text messaging "credits" that go over their network.

Perfect work around. That works. I was thinking the same thing.
