Hi I'm moving to Japan. Will my galaxy S5 I use in Australia work in japan?

Welcome to Android Central! Which exact S5 model is it? Do a Google search for "[your S5 model number] network bands." Now compare those frequencies with the carriers in Japan that you might consider (do a Google search for this as well). If they match, then the phone should work. If they don't, then you might be limited to 3G data, or even worse.
