I do not use my phone for email. But today I was waiting for an extremely important email while I was away from my desktop PC. So, I figured out how to add my Yahoo account to the Samsung Message app, then logged in and waited for the email to arrive. All day long the phone's been beeping when a new email comes in.

Now that I've received the email I was waiting for, I just want to sign-out of my Yahoo account and shut down the Galaxy app. But I don't see any way to do that.... the simplest thing yet it's ridiculously well-hidden. Would someone please guide me? Thanks.

Go to settings > accounts > and sign out of the account.

When I do that, the only two options are Sync Now or Remove Account.... not a Sign-out option.

Remove account isn't the same as sign-out, although it will stop the emails coming through. Sign-out would close the connection, but not force you to recreate the account the next time you want to sign in.

Yahoo is pretty arrogant. Not only is there no sign-out option, but if you set the account to only sync manually, it ignores you and still updates all the time.

For as little as I use the phone for email, the Remove Account option does the trick. Thanks, all, for your help.
